About Uptown Hog

Uptown Hog didn’t start with a business plan — it started with a fire, good friends, and feeding people.

It all began at a local BBQ competition, Rock-in Ribs, cooking alongside my friend John Winkert of Fat Daddy’s BBQ. Over that weekend, we fed thousands of people, stood around the smoker, and watched meat slowly turn into something that brought real joy to strangers. Hanging out by the fire, watching food cook, and seeing people genuinely enjoy it was pure bliss. That’s where I got the itch to feed people — and it never left.

 

Not long after, the opportunity came to take a leap with two close friends, Rick and Sam. Together, we launched our first setup — a 29-foot stationary food trailer — and soon after converted a smaller 16-foot trailer into a mini rig. That first season proved we were onto something.

 

Rick and Sam were instrumental in getting Uptown Hog off the ground during that first season, after which I continued building and growing the business into what it is today.

 

As the vision expanded, so did the equipment. We acquired a retired 48-foot hazmat training trailer and transformed it into the largest food trailer in the area. It was built with intention — three fully separated sections including a serving area, a dedicated prep and smoking space, and a storage section. Each area was sealed off to control environments and keep operations efficient.

 

Eventually, an opportunity came along to take Uptown Hog in a new direction. We were approached by 14 Mill Market in Nixa with the chance to step away from the harsh realities of food-truck life and into a climate-controlled food hall. Today, Uptown Hog operates inside a space filled with indoor and outdoor seating, patios, bars, and a community of vendors we get to collaborate and celebrate with every day.

 

Most recently, another chapter was added with the acquisition of a retired ambulance — now converted into a mobile catering and delivery vehicle known as the Ham-Bulance. It allows us to bring Uptown Hog on the road while staying true to the same mission that started it all.

 

At its core, Uptown Hog has always been about more than BBQ. It’s about community, generosity, and the simple joy of feeding people well.
